Philosophy

Each pour is a quiet homage to the Japanese philosophy Ichi-go Ichi-e  that means 'one lifetime, one meeting.' Reminding us to treasure each interaction, as it may never happen in quite the same way again. Rooted in Kyoto and reimagined in Bali, two places where rivers and traditions flow, we carry the Urasenke spirit with quiet innovation.

The name “CHON” comes from the Thai word “ชล,” meaning water — a symbol of life. Like water, we aim to nourish and connect through the warmth and intention of tea.

Concept

We offer an Omakase-style journey in matcha, tea, and experimental coffee that invites feeling, education, and sensory discovery — elevating each encounter into something deeply personal. Guided by the rhythm of Japan’s four seasons, our offerings evolve with time — each menu and encounter shaped to echo nature’s impermanence, narrated with subtle grace by our baristas and bartenders.

Respectful Collaboration

Through meaningful collaboration with tea farmers, practitioners, educators, and a diverse network of Japanese tea artists and Shokunin (職人)—especially small, independent partners—we honor their craft, stories, and ingredients with deep respect.

We aim to be a hub for sustainable tea culture across East and Southeast Asia—where tradition, community, and curiosity grow from soil to cup, one thoughtful encounter at a time.

  • 3 in Indonesia

Nurturing long-term relationships anchored in respect for land, craft, and culture. Because we strongly believe, tea begins with farmers and grows beyond tradition.
